If you've lived in Denver for any amount of time, you already know Santiago's. It's one of those places that just does everything right without trying too hard. The green chile tastes like it's been made the same way for 40 years, and honestly it probably has. Fresh tortilla, fluffy eggs, and that green chile has this deep, slow-cooked flavor that you can't fake.

I always go through the drive-through on Saturday mornings. Get it smothered. You're going to spend like eight bucks and leave completely full. The tortilla somehow holds up even when it's drowning in chile, which is more than I can say for most places. If someone's visiting Denver and asks me where to go first, this is it every time.

West Colfax

These burritos are genuinely stupid big. Like, bring-a-friend big. The pork green chile has real heat to it but it's not trying to prove anything, it just tastes good. Tender chunks of pork, a sauce that actually has flavor, and enough of it to fill a small backpack. The no-frills dining room is part of the whole experience.

The ratio of filling to tortilla is perfect. You're not eating a mouthful of plain tortilla every other bite like some places. The potatoes have a nice little crisp on them, the eggs are done well, and the green chile brings it all together. Also, get the hot salsa on the side. It's worth it.

City Park West

Onefold is the kind of place that makes you rethink what a breakfast burrito can be. They make their tortillas by hand, cook their potatoes in duck fat, and everything feels intentional. It's a small spot in City Park West with a line out the door most mornings, and for good reason. The fillings are a step above what you get at most breakfast spots around Denver.

Yeah, it costs more than your typical burrito. But this isn't your typical burrito. The duck fat potatoes are crispy and rich, the pork green chile is legit, and the handmade tortilla holds everything together without falling apart. It's the kind of place where you can taste the difference in every bite. The line moves fast so don't let that scare you off.

Sam's No. 3

Downtown / Aurora

Sam's has been around forever and it feels like it. Checkered floors, booths, the whole old-school diner thing. Get the smothered breakfast burrito with a side of hash browns and you've got one of the most satisfying meals downtown for the price. Nothing fancy, just good.

It's open 24 hours which is a huge plus. The burrito itself isn't the most exciting thing on this list, but it's the kind of place where you know exactly what you're getting and it never lets you down. Sometimes that's all you need. The coffee is decent too, which is more than I can say for a lot of burrito spots.

Rosalinda's

North Federal

This is the sleeper pick. Most people haven't heard of Rosalinda's and that's kind of the point. They stuff a whole chile relleno inside the breakfast burrito and it completely changes the game. You get this battered pepper mixed in with the eggs and beans and it adds a texture that you just don't find anywhere else.

It's a smaller burrito than some of the others on this list, but every bite counts. Nothing feels like filler. The salsa verde here is also really good, ask for it on the side for dipping. It's worth the drive up Federal. This is the kind of place you tell your friends about and they thank you later.
